Chef Mal has refined his skills at top Australian restaurants like Vue de Monde and Tetsuya’s, drawing inspiration from his Chinese-Malaysian heritage and his mother’s cooking. His dishes, meant to be shared, combine tradition with a modern twist.

This event is made even more special by his collaboration with Chef Will Meyrick, who returned to Australia during the pandemic to open Will Street in Perth. Both chefs share a passion for honoring Asian culinary traditions while introducing fresh techniques, using local produce from Western Australia and Bali.
