Gin & Tonic

East Indies Gin and Tonic
Take your gin and tonic to the next level with Archipelago Gin, kecombrang and star anise

Ingredients   

  • 40ml East Indies Archipelago Dry Gin
  • Tonic Water
  • Kecombrang (Torch Ginger Flower) & Star Anise for garnishing (Optional)

Instructions

  1. Fill your glass with ice and add your remaining ingredients. Stir gently until the drink is well combined and chilled.

  2. Garnish with a slice of kecombrang and star anise, serve and enjoy.

East Indies Negroni

The ultimate bittersweet cocktail, invented in Italy, reinvented in Bali.

Ingredients:

  • 40ml East Indies Gin 
  • 20ml Campari
  • 15ml Sweet Vermouth

Instructions

  1. Stir all liquid ingredients with ice.
  2. Strain into a chilled rocks glass filled with ice.
  3. Garnish with an orange twist.

Working with a master distiller the result is a beautifully balanced gin made with the highest quality Macedonian juniper and uniquely aromatic local flavours. 

HOW THE GIN WAS MADE

Their master distiller carefully balances the myriad flavours of our Indonesian botanicals with the highest quality Macedonian Juniper. The objective is to get a balance between the perfect concentration of flavours, and a smooth clean spirit. 

At Spice Islands Distilling Co. all of their small batch craft gins are authentically distilled using our handmade 550L copper still ‘Gede’, which was made in Germany by the lovely people at Carl.

Juniper and a selection of other botanicals are macerated in our spirit in Gede (the name given to the Balinese to their firstborn child), our hybrid pot and column still. The spirit is then heated and as the alcohol evaporates it gently vapour infuses our more delicate botanicals in the carter head, releasing oils and flavour into the liquid. 

For the next 6-8 hours the liquid will evaporate and condense as it passes from the alembic still, through the carter head, and finally through our 7 plate column still, each plate acting like its own distillation. This process of column distillation further concentrates our spirit and makes for the smoothest gin possible.
