Akasa brings us one of Bali’s most creative flame-grilled menus as Chef de Cuisine Joan Achour proves herself to be one of the island’s most fearless chefs. 

The menus dance through Asia with French flair. As a young apprentice in Paris, Joan loved visiting local Asian restaurants and dreamed of travelling. Her passion took her to the Maldives and Dubai to work and through Thailand and other South East Asian countries on a culinary adventure. All these experiences inform the menu at Akasa.

Each dish on AKASA’s menu perfectly blends flavour and spice, hitting all the flavour profiles with incredible balance and subtlety. From an intriguing menu of different peppers that influence the flavour of stunning flame-grilled steaks to Japanese, Chinese, Thai and Indonesian influences.

Starters like pan-fried foie gras with Asian pear and dashi broth, and Crying Tiger salad with meltingly tender wagyu beef dance on the palette while more substantial dishes like the robata dishes cooked on the flame grill are a perfect introduction to the sharing concept.

Mains include dishes from both the earth and the sea and there are some delicious choices for vegetarians among them. Giant prawns, king crab and sea bass dance alongside caramelized lamb cutlets, wagyu beef and organic chicken, each made special by skillful cooking and bold flavours.

Dessert is served with flair with a standout chocolate sphere filled with a medley of chocolate and raspberry revealed at the table with a hot sauce, it’s one of the few times the menu spills over into absolute indulgence.
