Behind the stove, Chef Lorenzo (Lolo) DePetris, a native of Piedmont, took the reins at Da Maria over two years ago. His effortless cooking style has melded beautifully with the vibrant dining spaces and the genuine spirit of Italian hospitality.
As Executive Chef of Da Maria and Luigi’s Hot Pizza in Canggu and a partner in the fabulous neo-bistro Mosto in Berawa, Chef Lorenzo shares his passion for regional Italian food with enthusiastic diners at Da Maria.
With an international team behind the stylish venue’s success, Da Maria has always focused on the authenticity of its recipes from the kitchen to the bar. Since opening eight years ago, Da Maria has established itself as one of Bali’s most stylish Italian eateries. With a decor inspired by the island of Capri, the menu focuses on the most revered dishes from tip to toe of the boot.
“ Da Maria has a distinctive style and a great track record. For me, it’s important to work with what has been such a success so far. In my time here I’ve introduced new dishes that work well on this menu to keep things fresh, “ he explains.
Chef Lorenzo began his cooking career in Sicily at Restaurant Duomo, a much-loved restaurant with 2 Michelin stars. It was here his passion for cooking was ignited and his love affair with local cuisine began.
Da Maria’s popularity doesn’t begin and end with the menu. The bar is a highlight with a brilliant cocktail list created by former world champion bartender Denny Bakieve and a wine list that features natural wines and a selection of boutique varieties. When it comes to party night, Da Maria sparkles here too.
Da Maria opens each night with La Familia – a chance to take the family out for pizza and pasta at happy hour prices. The kids are invited to get in on the action with the pizza chefs, giving parents a little time to savour the food and wine. The bar action begins early as patrons start the evening with an aperitivo. The restaurant begins to fill and small plates and mains from the moreish rosemary-scented lamb arrosticini to golden cotoletta, crispy-skinned fish of the day and a stunning barley-fed rib eye with tarragon mayo leave the open kitchen.
The pizza here is a must – and the charred wood-fired pizzas are the best you’ll try this side of Naples. Whether you’re a purist or enjoy a little spice, selections range from classic to seafood and vegetarian. They follow the same recipe at Luigi’s, so when in Canggu, make sure you add this to your list.
Pasta lovers will find nirvana here. The pasta is made fresh daily with traditional ingredients and the right amount of bite. Try the pappardelle with shiraz and cabernet brisket ragu that needs only a flourish of aged Parmigiano Reggiano, or the silky raviolini with spinach and ricotta filling dressed in sage butter.
If there were salad awards then the wood-roasted beetroot with baked ricotta and radicchio would be a contender but it’s not alone on the veggie board, adding colour and great flavours to the menu.
Twice a week, Da Maria turns up the volume for its legendary parties and the pizzas fuel a lively crowd who come for the music, the drinks and the atmosphere.
